Finally we found the most delicious, wild raw honey collected from the forest of Nakhon Sawan in Thailand. It is a true gift from nature: found deep inside the forest twice a year by experienced local honey hunters, nectar is collected from wild flowers such as pradu, longan and lamphun, depending on the season. 

The honey is thick, you can taste the pollen and propolis, it is rich in phytonutrients and antimicrobial compounds. As it is not pasteurized, it still contains gut friendly bacteria such as lactobacilli and bifidobacteria, which explain many therapeutic properties of honey. 

We have tasted many honey products in Thailand. Most of them are very thin, no special taste, sometimes you may wonder if it is really 100% honey. Some dishonest vendors often mix cheap syrup to substitute some honey to increase the profit. 

Honey may promote better blood sugar control as it consists of a nearly 1:1 ratio of fructose to glucose, where fructose unlocks the enzyme from the liver that is necessary for the incorporation of glucose into glycogen. This metabolic stress can lead to impaired glucose metabolism, insulin resistance, diabetes and increased risk for cardiovascular disease and obesity.
